Whole Wheat Honey Pumpkin Muffins

We love all things pumpkin–and these muffins are at the top of the list!

They work for a dessert, an after school snack, or even as a breakfast.  Keep your overall cost down by using your own pumpkin puree.

Whole Wheat Honey Pumpkin Muffins

Ingredients

  • 1 ½ c Whole Wheat Flour (.26)
  • ½c brown sugar (.10)
  • 1 tsp pumpkin pie spice
  • extra dash of cinnamon
  • 3/4 tsp baking powder
  • ½ tsp soda
  • ½ tsp salt
  • 2 eggs
  • 1 cup pumpkin puree (.25)
  • 1/2 c oil (.25)
  • 1/2 c honey (.25)

Instructions

  1. Preheat oven to 350 degrees.
  2. In a bowl mix flour, brown sugar, spices, baking powder, baking soda, and salt.
  3. Make a well in the center and add eggs, pumpkin, oil and honey.
  4. Mix ingredients until moistened.
  5. Fill greased muffin cups (or lined) 2/3 full.
  6. Bake for 18 minutes or until muffins spring back.
