Weekly Menu Plan {April 15th-21st}

by GettingFreedom on April 16, 2012

Where did the weekend go?  It seems like it just got here, only for me to wake up and it be Monday.{sigh}

I’m hoping to be able to attack some freezer cooking this week.  Our busy season {and many late nights} is in full swing, and I’m desperately trying to save our grocery budget.  By having freezer meals {and snacks!} at our fingertips–we’ll save a bundle.

Here’s what we’re eating this week::

  • Biscuits and Sausage Gravy
  • Breakfast Burritos

  • Tortilla Roll-Ups
  • Homemade Pizza Pockets
  • Turkey Salad Pitas
  • Leftovers

  • Sunday:: Hamburger Gravy with Creamy Mashed Potatoes.  Carrots.  Caramel Marshmallow Popcorn.
  • Monday:: Turkey Scallopini.  Pasta Salad.  Homemade Garlic Breadsticks.
  • Friday:: Veggie Lovers and Pepperoni.
  • Saturday:: Leftovers.

Beef and broccoli stir fry must be popular this week, your the third person I’ve seen who had it on their menu, including me! Have a great week. :)

Really?! That is funny! Our local {not a chain} grocer had it on sale last week. I wonder if other stores did as well?

Your homemade granola looks delicious!
Here from MPM. We jumped into our busy work season too, and I keep trying to fill our freezer with easy meals – then I use them just as quickly, lol. But you’re right; it saves bundle to keep on top of things and not fall behind on the meals!

Everytime I think I’m on top of the game {with freezer meals}, I’m proven wrong. So is life, I guess.

Do you make your whole meals or just parts? I am not a huge fan of some of the frozen casseroles with a few exceptions, but we like to do things like have the meat marinated & ready to go, veggies prepped, sauces made, things like that.

Turkey is a huge fave around here, so your menu sounds really good.

Really it depends. Sometimes I make whole meals, and others I just prepare the meat part–like you mentioned.

We love turkey, too! I cooked a whole turkey last week, which is why there’s turkey overload on this weeks menu. :)
