Salmon Patties

I used to have these all the time growing up. Mom used to make them all the time. It wasn’t until just a few months ago, that I actually made them myself. I’m kicking myself for waiting for so long. They are so incredibly easy, and flavorful.

My husband had never had them before I made them, and he now asks for them all the time. I’ve also subsitituted tuna in for the salmon. Still very awesome. It is hard to determine which we like best.

So, by request, here is my Salmon Patty recipe:

Salmon Patties

1 can salmon ($2.08. Ouch! Walgreens has these on sale constantly for $1.59)

1/4 to 1/2 cup chopped onion (.15)

1/2 cup chopped celery (.07)

2 eggs (.24)

1-1 1/2 cups dry bread crumbs or crumbled crackers

salt and pepper

I will be honest, I flipped out when I seen the salmon. I will warn you, it’s ugly. And scary looking. Personally, I take all the bones out and I wash off the skin remnants. It kinda freaks me out a bit.

Crumble up the salmon and combine with the onion and celery. Lightly beat eggs and mix well with salmon and salt and pepper. Once mixed, throw in the bread crumbs or crackers.

Once you have everything mixed up form into patties. It depends on what we are having for a side on how big I will make just use your own judgement. You should be able to get 4 pretty good sized ones. Heat up griddle or a pan and fry until browned and warmed/cooked throughout. (Here we go with the timing thing again! :) If I were to guess, I would say that the whole cooking process took me no more than 15 minutes.)

If you want to make Tuna Patties, just add tuna instead of salmon.
