Pumpkin Rolls with Honey Cinnamon Spread

Thanksgiving is such a great time of year! Families and friends gather together and share what they’re thankful for. The past few years have really made me appreciate my blessings, and especially {the little} time spent with my loved ones.  Last year I was elated to host Thanksgiving dinner, and this year I’m hoping to do the same.  After all, I’ve mastered how to make the perfect stress free turkey!

As it is every time when cooking for a group, you have to keep in mind dietary restrictions and preferences.  Typically we’re an all butter family, however I know that not everyone is.  Ahem. My husband’s doctor wishes we wouldn’t be!  

I know that I love my sweet potatoes all gussied up and sweet, while my husband prefers them in a more natural state.  Knowing these things, I’ve made over a two traditional Thanksgiving dishes and I’m confident that every palate at my dinner table will be pleased!

Pumpkin Rolls

3 ½ cups all-purpose flour
1 ½ tablespoons sugar
1 ½teaspoons salt
2 ½ tsp  yeast
1 3/4 cup pumpkin puree or 1 can
½ cup milk, warmed
¼ cup Brummel and Brown

Dissolve yeast in the warm milk.
Add in pumpkin puree, sugar, salt, flour and Brummel and Brown spread and mix for 5 minutes.
If the mixture is a bit wet, add in a couple more tablespoons of flour.
Let rise until double.
Split dough into 18 balls and place in a 9×13 baking dish or on a baking sheet.
Let rolls rise until doubled again.
Bake at 350° for 20 minutes, or until golden brown.
For an added flavor boost top with Honey Cinnamon Spread.

Mashed Sweet Potatoes with Honey Cinnamon Spread

2 cups peeled/diced sweet potatoes

Boil sweet potatoes in water until tender, roughly 45 minutes.
Drain almost all of water.
Mash sweet potatoes and add about ¼ cup brown sugar.
Bake in 350° oven for 20 minutes.

Honey Cinnamon Spread

1/3 cup Country Crock
2 Tbsp Honey
1-2 tsp Cinnamon {use as little or as much as your taste buds desire!}

Whip all 3 ingredients using a wire whisk until fully incorporated.
Refrigerate until ready to use.

If you like your sweet potatoes sweet like me, top with Honey Cinnamon Spread.
