Pantry Challenge– Week Two Menu

Oh how I wish I could overcome this sickness!  I’ve been fighting a major head cold {or maybe it’s sinuses?} for the last two weeks.  Just when I think I’m getting better, it knocks me back down.  After a very busy weekend, by Sunday I was down for the count!

Last week I was able to clean out and do a freezer inventory on our deep freezers.  Going in, I knew we had a lot of food, but I guess I didn’t really realize just how much we had!  Keeping an up to date Freezer Inventory is very important when you are trying to maintain a minimal grocery budget.  I could have not purchased a few items on our recent trip after discovering I had more than enough in our freezers.  Lesson learned.  Again. :)

While I was cleaning out the freezers, there were many things I didn’t want to put back in because of the amount of room they took up, so I scrapped the menu plan for 2 nights–and winged it!  We ended up eating Chilli {from the freezer}, Peach Pie {peach pie filling and frozen homemade pie crust were in the freezer waiting to be assembled} and no one remembers what we ate for the second night!

Yay for flexibility!

 
Breakfast::

  • Waffles with Fruit Topping {our freezer is overflowing with fruit!}
  • Biscuits and Sausage Gravy
  • Oatmeal {Peanut Butter, and topped with various fruits}
  • Granola with Fruit and Yogurt
  • Toast with Homemade Jelly, Fresh Fruit

Lunches::

  • Pizza Pockets
  • Tortilla Roll-Ups
  • Chicken Nuggets and French Fries
  • Leftovers

Dinners::

  • Sunday:: We just snacked. Busy weekend had us all wiped out!

 

 

 

  • Tuesday:: Enchilada Salad.  Refried Beans.  Spanish Rice.
  • Wednesday:: Steak and Spinach Pitas {making homemade pitas}. Homemade Steak Fries.
  • Thursday:: Chicken Wild Rice Soup. Cheddar Bay Biscuits.
  • Friday:: Eating Out.
  • Saturday:: Leftovers?

Snacks::

  • Banana Bread {Must use up all that frozen banana puree!}
  • Chocolate Chip Cookies
  • Smoothies {so much frozen fruit in the freezer, still!}
