Pantry Challenge Week Three Menu

Well, we’re entering week three of the January Pantry Challenge.  How is everyone doing with their goals?  I’ll share more about my progress in a separate post later this week.

Generally, I would have already done my grocery shopping for the next two weeks {we usually go on Fridays}.  But last week my husband and I drifted off to a Laugh Your Way to a Better Marriage Seminar–and it was an absolute blast!  We seriously laughed so hard we were crying at times.  So, the kids and I are off today to do our grocery shopping.  We should be able to get everything we need for right around $60–or at least that is what I’m shooting for.

 

Here’s this weeks menu::

 

Breakfast::

  • Waffles with Fruit Topping {our freezer is overflowing with fruit!}
  • Oatmeal {Peanut Butter, and topped with various fruits}
  • Granola with Fruit and Yogurt

Lunches::

  • Homemade Hummus and Pita Bread
  • Tortilla Roll-Ups
  • Easy Chilli Mac
  • Leftovers

Dinners::

  • Sunday:: Small Group.  We took Chicken Salad.
  • Monday:: Meatloaf Cups.  Mashed Potatoes/Gravy.  Corn.
  • Tuesday:: Reubens on Homemade Rye Bread. Sauerkraut.
  • Wednesday:: Steak and Spinach Roll Up. Sweet Potato Fries. Mock Olive Garden Salad.
  • Thursday:: Chicken Wild Rice Soup. Cheddar Bay Biscuits. {still haven’t made this!}
  • Friday:: Pizza/Popcorn/Movie Night:: Pepperoni Pizza.  Buffalo Chicken Pizza.
  • Saturday:: Leftovers?

Snacks::
