Pantry Challenge Menu–Week One

This is the first week of the January Pantry Challenge–and I’m excited to see just how creative I can be with our meals.  I’m not completly abstaining from grocery shopping, I just won’t be purchasing as I normally would.  Today is the day I have set aside to go through our 3 freezers and completely reorganize and inventory them.  If I have any gumption left, I’ll do an inventory of our pantry as well.  From there I will plan the rest of our month out primarily using what we have on hand. 

Breakfast::

  • Waffles with Fruit Topping
  • Biscuits and Sausage Gravy
  • Oatmeal {Peanut Butter, and topped with various fruits}
  • Granola with Fruit and Yogurt
  • Toast with Homemade Jelly, Fresh Fruit

Lunches::

  • Tortilla Roll-Ups
  • Chicken Nuggets and French Fries
  • Chicken Salad
  • Leftovers

Dinners::

  • Sunday:: Hoppin’ John {had to have our black eyed peas!}
  • Monday:: Lasagna.  Green Beans. Mock Olive Garden Salad.
  • Tuesday:: Chicken Wild Rice Soup. Cheddar Bay Biscuits.
  • Wednesday:: Steak and Spinach Pitas {making homemade pitas}. Homemade Steak Fries.
  • Thursday:: Barley Lentil Soup. French Bread.
  • Friday:: Pizza/Popcorn/Movie Night:: Veggie Lovers and Pepperoni.
  • Saturday:: Leftovers.

Snacks::
