Meals without Deals

Last week was a yummy week of food, and one of the best we’ve had in  long time-if I do say so myself!  The Broccoli Cheese Soup in Homemade Bread Bowls was the all around hit, except with the 5 year old who hates all things green!  I’ll break him of that someday. ;)  I’ll share both of those recipes later on this week.

I skipped the Bean and Barley Soup, and instead made the Potato Keilbasa Skillet that Laura featured a few weeks ago.  Oh my was it good!  I wasn’t sure what my family would think of it, since it’s not like anything we usually eat–but it recieved rave reviews.

This week may end up being another crazy week, but only time will tell.  My mother is back in the hospital, and we are expecting more snow (the kids were out all week last week, except Monday!).  Hopefully our menu plan doesn’t suffer.

Breakfast::

  • Oatmeal with Raisins and Diced Apples
  • Egg White/Veggie Scramble
  • Granola/Yogurt

Dinners::

  • Super Bowl Snacks:: Lumpia.  Jalapeno Popper Dip.  Lil Smokies.  Cupcakes. {$8-ish?}
  • Stuffed Chicken. Brown Rice.  Steamed Veggies. {5 servings; $4.75}
  • Southwestern Bean and Barley Soup.  TriColor Bread Braid {6 servings; $3.50} {didn’t make this last week}
  • Dinner at Church {was cancelled last week}
  • French Dip Sandwiches using Venison.  Parmesan Oven Fries.  Salad. {8 servings; $3.50}
  • Pizza/Popcorn/Movie Night:: Pizza Roll.  Mock Olive Garden Salad. {8 servings; $7}  Birthday Cake for a Special 9 year old!
  • Leftovers.

Total Cost of Dinners: $26.75  Average Cost per Serving: .84/ea.  {Ouch!  It’s hard to figure with the Super Bowl Snacks, but that’s my best guess.  It’s a lot higher than normal, but that happens when you have a big snack day. :) }
