Meals with Deals: Freezer Edition

For this Meals with Deals Edition,  I’m shopping my freezer and pantry.  I didn’t realize that I had so much food taking up space, until I got to looking at what I actually had! I’m thinking it’s past time for me to update my freezer inventory! So this week, I’m working on using up the older things, so I can replenish with new. In the coming weeks I’ll be working at stocking up the freezer with meals for the coming {very busy} gardening and soccer seasons.

Now that I’ve found my local grocer’s clearance section (it’s “hidden” on the bottom shelf of a stand up cooler!), I’ve had a lot of fun popping in while I’m already in town, just to see what I can find.  This last week I got Borden sliced cheese (which is a treat in our house), Pillsbury refrigerated cookie dough (wish I had my coupon binder with me to make it even sweeter ;) ) all for 99¢ each.  They also had some flavored wraps and more pita bread–so I snatched them up, also.

Meat Souffle, Creamed Potatoes and Cooked Carrots

We all had a blast eating from my grandmother’s cookbook last week.  I know that sounds strange, but knowing we were eating something that my mother would have eaten as a child, made it very special.  And to my surprise, it was a winner!  For those that were questioning a “Meat Souffle”, it’s basically an oven omelet–but extra light and fluffy. It only uses one cup of your choice cooked meat, and a couple eggs–which makes it a very frugal dish.

This weeks food looks like this:

Breakfast::

  • Whole Wheat Muffins
  • Oatmeal with Fruit

Lunches::

  • Grilled Cheese w/Bacon Sandwiches and Fruit
  • Tomato Soup with Pasta and Cheesy French Bread
  • Black Beans with Corn, Tomatoes, Avocado Pita Pockets
  • Hummus and Pita Bread

Dinners::

  • Monday: Penne Pasta with White Beans.  Copycat Olive Garden Salad.  Raspberry Oat Bars. {$6.25, 6 Main Servings}
  • Tuesday: Poppy Seed Chicken.  Carrots.  Homemade Rolls (saved from Sunday’s meal) {$4.50, 5 servings}
  • Wednesday Thanksgiving in March! Turkey {using this method}.  Mashed Potatoes. Green Beans. Peach Pie.{$6.50-ish, 5 Main Servings}
  • Thursday: Turkey Tetrazinni.  Green Salad w/HM Russian Dressing. {$4, 6 servings}
  • Friday Pizza/Popcorn/Movie Night!  Buffalo Chicken Pizza.  Taco Pizza. {$7, 8 servings}
  • Saturday: Going to Mom’s for a big family gathering.

Total Dinner Cost: $30.25 Average Cost per Serving: 84¢ each

Snacks::

  • Banana Pudding
  • Chocolate Oatmeal Cookies (didn’t make these last week)
