Meals and Deals

Another whirlwind week is behind us.  I’m very thankful to say that my mother is finally home!  She had brain surgery on January 17th to remove a tumor, that proved to be cancerous.  While it was obviously a difficult situation, it could have been a whole lot worse!  In the upcoming weeks, she will continue therapy to help her regain some control of her leg (the tumor was on the part of the brain that controls movement), she will also begin radiation to get rid of the rest of the brain tumor and look into their option for treating the spot on her lung.  Through this time, we have been constantly reminded of just how great our God is!

Although I don’t really know what to think of our current forcast of a snow/ice storm–I am looking forward to some snow days with no plans and commitments!  We’re going to eat our fair share of comfort food! ;)

Breakfast::

  • Cinnamon Swirl French Toast {recipe coming soon!}
  • Egg White and Veggie Burritos
  • Homemade Granola

Dinners::

  • Bratwurst with sauteed veggies.   Waffle Fries. {5 servings; $5.50}
  • Broccoli Cheddar Soup in Homemade Bread Bowls {8 servings; $4.50}
  • Dirty Beans and Rice.  Salad. {8 servings; $2.25}
  • Dinner at Church.  This is the plan, but Epic Snowstorm of 2011 may change that.  In such case, I have a backup plan–Chicken Quesadillas, Refried Beans.  Salad. {5 servings; $3.75}

  • Southwestern Bean and Barley Soup.  Tri Color Bread Braid {6 servings; $3.50}
  • Pizza/Popcorn/Movie Night::  Cheeseburger Pizza {didn’t do this last week}, Taco Pizza {10 servings; $7}
  • Leftovers

Total Cost of Dinners: $22.75 {$26.50 with Wednesday};  .61/serving {or .63 with Wed.}

Snacks::

  • Homemade Hummus and Pita Bread
  • Chocolate Oatmeal Cookies {Yikes, I really thought I shared this recipe!}
  • Celery and PB

 

This week in the local grocery shopping front, there were very few coupon matchups.  Instead of posting them–I decided to share one of my favorite grocery shopping tips, which applies to any grocery shopper!

 If you find a good deal on produce, stock up and remember your friend, The Freezer!  If you are unable to eat everything before goes to waste throw it in the freezer to use at a later date. 

My favorites?  Bananas (on sale at G&W Supermarket every Tuesday for .19/pound!}, onions, green peppers, and peaches.
