Ham and Scalloped Potatoes

My mom used to always make this dish, but I’m always forgetting about it. I still had some ham leftover from Christmas and I knew it needed to be dealt with.

The other night I decided to whip up this old family favorite.

Ham and Scalloped Potatoes


  • 2 cups leftover ham ($1.88)*
  • 4 med sized potaoes (.50)
  • 1/2 c finely chopped onion (.15)
  • 2 1/2 c milk (.40)
  • 1/4 c butter
  • 5 tsp flour
  • handful shredded cheese (.25)


  1. Saute the onions until clear in a dab of butter.
  2. Meanwhile, slice pototes thin. {Mandoline's and Food Processors make this easy work}, and chop up the ham into bite sized pieces.
  3. Warm milk saucepan {I suppose a microwave would also do the trick}, but do not boil.
  4. In another saucepan, melt the butter and stir in the flour gradually.
  5. Add the warm milk and cheese and stir until cheese is melted.
  6. Generously butter a 9 x 13 pan.
  7. Layer the ham, potatoes, and onions.
  8. Pour milk mixture over the top.
  9. Bake at 350 degress for 1 hour, or until potatoes are tender.
  10. Total Estimated Cost: $3.18
  11. We served ours with peas, so the total dinner cost was $3.68 for 8 servings or 46¢/serving

*Our Christmas ham was $15. So far (including this one) my family has eaten 5 meals. With the remainder ham, I put it in the food processor (I’m loving this thing!) and chopped it up. I broke it up into meal size portions and placed in the freezer for later. I came up with 3 new containers, for a total of 8 meals. I took the total cost of my ham ($15) and divided it by total meals (8) and that is how I came up with $1.88.
