Dehydrating Strawberries

This fall I finally replaced my dehydrator that died in the middle of gardening season a few years ago, while full with hot peppers.  A dehydrator is a great tool to have in any frugal kitchen, as it allows you to preserve foods {everything you can imagine!} with little effort.  A dehydrator is especially perfect for those that are afraid of home canning, yet want to preserve their garden harvests or be able to take advantage of good sales and have limited freezer space.

Last week I came across a steal of a deal on strawberries at our local discount grocer, and I knew I needed to cash in.  With an investment of $24, I came home with 24 overflowing pints of gorgeous, juicy strawberries.  My children were convinced that they were experiencing heaven in the middle of winter!

While my kids can pack away strawberries faster than any person I’ve ever seen, I knew that there was no way all 24 of those pints would be eaten before they spoiled.  In order to allow us to enjoy them longer, I decided I would pop them in the dehydrator so we could enjoy them in our cereal, granola, and in our oatmeal.  Maybe I should make up a batch of Strawberry Cheesecake Ice Cream!

Strawberries, as well as most dried fruits, are super easy to dehydrate and they’ll last for about a year if stored in an airtight container.

How to Dehydrate Strawberries

First gently wash and hull your strawberries.

Using a sharp knife, or egg slicer, slice strawberries in thin slices as uniformly as possible.  If the slices vary too much in width, some will be dried far earlier than others.

Place strawberry slices in a single layer on dehydrator racks and dry for 8-12 hours (I did mine overnight) at 135°.

If you do not have a dehydrator, you can dry your strawberries by placing strawberry slices in a single layer on baking sheets in an oven placed on it’s lowest setting.  Be sure to check slices every hour or so and remove any that are completely dried.

Your dehydrated strawberry slices are finished when they are crisp.  When you break them in half, no moisture should be present.

Store in an air tight container, such as a glass jar.  If you seen any condensation forming on the glass, place your strawberry slices back on the dehydrator rack and dry until no moisture remains.
