Crock pot Italian Chicken {September 22nd}

Chicken is one of those foods that is so versitile when it comes to crock pot cooking. There are a ton of recipes that call for chicken and it’s probably my most go to base item when using my crock pot. This Italian Chicken recipe is very delicious and even though I served it over whole wheat penne pasta, just about any kind of pasta would work.

  • 4 chicken breasts
  • 1 packet dry Zesty Italian dressing
  • 1 (8 oz) package cream cheese, softened
  • 2 cans cream of chicken soup


  1. Place the chicken in the crock pot and sprinkle the Italian dressing on top.
  2. Combine cream cheese and cream of chicken soup in a small saucepan over low heat mixing together until cream cheese is melted. Pour over chicken.
  3. Cook on low in the crock pot for at least 4 hours, 6-8 hours is better.
  4. Once chicken is done you can leave the chicken whole, cut it up or shred it.
  5. Once you have cut up the chicken, place it back in the crock pot and stir into the sauce. If the sauce is thicker than you'd like, you can thin it with a little milk.
  6. Serve on top of pasta or rice.


My family really enjoyed this meal. I did too although it calls for dry zesty Italian dressing and I only had bottled dressing, so I used about a cup of it. Also, if you prefer, instead of using store bought cream of chicken soup, you can make your own using Phoebe’s recipe. Not only is it cheaper, but you also control what ingredients you use.  When it comes to cooking, you don’t always have to follow the recipe step by step. Sometimes {not always} substitutions are good ideas. Next time I just might try it on mashed potatoes.
