What’s a girl to do when she has an overflow of carrots, raisins, almonds, and even oranges?
Make a salad, that’s what!
I created this Carrot Raisin Almond Salad after getting in our Azure Standard order. It is modeled after the {apparently} famous Carrot Raisin Salad {that I had never heard of or tasted}. I’m trying to figure out where I’ve been hiding my whole life that I’ve never been graced with such a dish!
I added a couple of additions to the ol’ favorite–and I think it’s amazing! I could seriously eat the entire thing all.by.myself. It’s healthy-ish, right?
A new twist on an old classic.
Ingredients
- 1 cup shredded carrots
- ½ cup raisins
- ¼ cup sliced almonds
- juice from one orange
- 2 Tbsp brown sugar
Instructions
- Combine all ingredients in a bowl and serve immediately.
- This recipe is very forgiving! You can easily add more or less of any of the ingredients, depending on your own personal taste.
Not only is this Carrot Almond Raisin Salad uber yummy, it’s super easy to throw together and serve. It’s a great addition to a barbeque {ooohh, you could even take it camping/hiking!} or busy weeknight meal.
