Dear Friends

by GettingFreedom on July 27, 2011

If you follow me on Facebook, you probably already know where I’ve been the last few days.  If not, let me fill you in as much as I can.  Last weekend, my daughter took part in the Show-Me-State Games {for soccer} up in Central Missouri.  Our week and weekend, was full and disappeared in a flash.  Sunday evening when I returned home, I found out that my mother had been readmitted to the hospital.

Monday morning I found out that things were not looking very good, and she was in a great deal of pain.  Tuesday, the children and I packed up and went to visit her in the hospital.  It was evident to me that her health had taken a turn. The children and I came back home late Tuesday evening, and packed our bags and prepared to stay back in my hometown as long as I was needed.

My mother was discharged from the hospital shortly after I left, knowing that our purpose at this point was just to keep her comfortable.  Today has been a very hard day for me.  I’ve seen her yell out in pain, and ask why she was going through this.  I’ve seen her laugh, and I’ve seen her cry.  I’ve seen her stare at me blankly and confused.

A talk with her doctor confirmed all of our thoughts.  Her days left here on this Earth are numbered.  I ask for your prayers during this time.  My family is having a hard time dealing with this sudden turn, and also remembering the death of my grandmother {mom’s mother} one year ago in August.

Hope to be back soon,

Phoebe

Frugal Gardening 101: Whoa! Green Beans!

by GettingFreedom on July 19, 2011

Even though my garden isn’t much to shake a stick at {yet}, I have a few friends that have more than enough produce, and are willing to share it with us not-so-fortunate gardeners.  Earlier this week, I picked green beans out of a friends garden until I couldn’t pick any more!

In addition to all those green beans, I also picked a small head of cabbage and some jalapeno peppers {actually twice as much as in the picture}, and a petite bell pepper that my husband ate before I could snap a picture. :)

Now it’s your turn to show off your garden!  Be sure to check out the gardens of my friends Amy and Connie.

Home Canning Refried Beans

July 6, 2011

Homemade refried beans are on our menu atleast once a week.  If we’re not having them in our quesadillas, we’re having them alongside our tacos, enchiladas or in a taco salad.  They’re frugal and packed with flavor, two musts in our kitchen! I was delighted when I found out that dried beans could easily be [...]

Due to many circumstances out of our control, we were unable to plant the extensive spring/summer garden that we had planned.  Thankfully, all is not lost and we plan to take full advantage of our summer/fall growing season. In the meantime, though, we are very thankful for family and friends who are blessing us with [...]
