Cheesy Ham and Rice Casserole

Tonight for dinner I had fully planned on making one of our family favorites, Cashew Chicken.  The rice was cooking so I could make up a quick batch of Fried Rice, when it hit me.  I think we ran out of Soy Sauce months ago.  Who runs out of Soy Sauce and forgets to replace it for this long? Sure enough–no Soy Sauce–no Cashew Chicken.

Ack!  Tonight there was no Plan B, or so I thought.

In a hurry to get something thrown together, I decided that a casserole of some form would have to work.  After many different concoctions crossed my mind, this is what we ended up with.  Boy was it good!

Cheesy Ham and Rice Casserole

1 ½ cups diced ham (or more if you prefer)

3 cups cooked, lightly seasoned brown rice (I season ours with salt and pepper)

½ bag fr0zen peas

1 cup chicken broth

½ cup milk

handful shredded cheese

Add the cooked rice, peas, and ham to an 8×11 casserole dish and mix up.  Mix up the milk and the chicken broth and pour into dish.  Top with cheese.

Bake at 350° for about 30-45 minutes.

Yeah… we’ve been out of Soy Sauce for a long time, too. I was thinking we could have stir-fry this week, but no Soy Sauce – no stir-fry. They should sell it in big jugs, shouldn’t they?

Your concoction sounds yummy! It’s amazing what you can come up with when you have to throw stuff together and hope it tastes good :)

This sounds really good! I am usually ahead of the game in planning meals out for the week/month, but am flying by the seat of my pants lately. I’m off to get the ham out of the freeezer and to start my rice soaking for tomorrow night. :) Thanks!

Oh, that looks really good! Great job for having to change your meal plans!
I do that quite often, unfortunately….make my meal plan and then forget we don’t have a certain ingredient OR someone has eaten it, and not told me! LOL!

They DO sell soy sauce (shoyu) in big jugs if you live in the big city (and we lived near an Asian market). But if you lived in the big city (Phoenix), and moved to northern AZ a couple months ago, you can still run out ’cause you’re so used to there being plenty (in that big jug.) On Friday I couldn’t make the marinade for the crockpot chuck roast with as much shoyu as I wanted, nor (obviously) the Sweet Soy Marinated Chicken. And on Saturday I really had to look to find soy sauce in this small town (with an almost entirely caucasian/native american population). But I DID find it, and bought THREE 10-oz. (small to me) bottles!
