During the summer months, nothing beats a cold sandwich, loaded with veggies alongside some delicious fruit. To change things up a bit, I like to make sandwiches on a tortilla instead of bread. Not only does it lighten the sandwich up a bit–but it changes the whole flavor. Or atleast I think so.

To make these Snail Tortilla Sandwiches all you need is:
Whole Wheat Tortillas
Cream Cheese
Lunch Meat (We used Turkey)
Sliced Cheese (Our favorite is either Colby Jack, or Muenster)
Whole Gherkins
Spinach (We were fresh out.
)
Lay out your tortillas and spread with cream cheese (you can use mayonnaise or miracle whip if you prefer). Add your spinach leaves, a layer of lunch meat and a layer of cheese. Roll up, jelly roll style. Slice into 1 to 1½ inch pieces.
To serve, slice gherkins like so:

Unroll a small part of your tortilla sandwich and place on the angle of the gherkin, making a complete snail style tortilla sandwich. Serve alongside some fresh fruit, and you’ve got yourself a delicious summertime lunch!

I love these! Grace eats miniature kosher dills at almost every meal, and I know she’ll love these snail sandwiches. They might go into her next muffin tin meal, even.

Yum! I agree about the tortillas. I love them too. We fill them for lunch with whatever is lying around! Cold chicken, salsa, lettuce, red onion, mayo, cheese….

Oh, I totally see my toddler LOVING these. We’re gluten-free around here, but I imagine I can find a way to tweak it to his needs. Love it…thank you!

How creative! I’m not sure my son would eat them – he’s so picky. But I would!
I’m having a new link party “Cheap Thrills Thursday” starting the 29th. It’s for creative ideas that cost under $20. If you have a project you’d like to share, I’d love for you to stop by and join in!

I make mine with turkey, cream cheese and cranberry conserve (canned myself, of course!)
These are also good with 1/2 mustard-1/2 mayo dressing, ham, cheese and thinly sliced lettuce and tomato. If you are looking for other ideas, look for “aram sandwich” and ignore the part about the lavosh bread. (It’s more of a hassle than it’s worth- tortillas are MUCH easier!) Glad to see you back and that Blake is doing so well!

@Thea–
Yummy! Your sandwiches sound delish! Do you happen to have a recipe for cranberry conserve? I have a bunch of cranberries in my freezer that need to be put to good use.
