Mixed Berry Cream Muffins

Ah, Spring! The birds… the sunshine… the warm breezes… the new life… the BERRIES. It simply delights my soul to see berries on sale in the grocery store these days. And decent-looking berries, too, not those poor withered things that sometimes grace the winter produce department.

I can eat huge amounts of berries without doing a thing to them, but when I find myself with some extras on my hands, I like to bake up some…

Mixed Berry Cream Muffins

2 eggs

2/3 c white sugar

1/3 c brown sugar

1/2 c canola oil

1/2 teaspoon vanilla

1/2 teaspoon salt

1/2 teaspoon baking soda

1 cup sour cream

1 cup mixed berries (fresh or frozen is perfectly fine- I used a mix of blueberries, raspberries, and blackberries for this batch)
1. Preheat oven to 400 and grease a 12-cup muffin tin.
2. In large bowl, beat eggs.

3. Gradually add sugar then oil while beating.

4. Add in vanilla, salt, and baking soda. (May I just note how handy it is that these are all the same measure? Be sure to do the vanilla last so you can use one spoon!)

5. Alternate adding flour and sour cream–

1 cup of flour, then 1/2 cup sour cream, and repeat.

6. Gently fold in berries.

7. Scoop batter into prepared muffin cups.

**I topped half of these with streusel because I had a tiny bit in my freezer. The recipe does not call for streusel and doesn’t really need it… that being said, I’m sometimes overindulgent and feel like streusel makes anything better. Totally your call.**

8. Bake in preheated oven for 20 minutes. Cool on rack.

Am I the only one that noticed there is no amount given for flour in the recipe?

@Kristin, Well, that surely would have helped now, wouldn’t it? Should be 2 cups of flour. :) (Sorry I didn’t respond sooner… clearly, it’d been awhile since I checked back on this post!)
