Chocolate Oatmeal Cake

A friend of  mine has always made an Oatmeal Cake that she has raved, and raved about.  She takes it to church and family gatherings, and it always gets eaten up in a flash.  For one reason or another, she has never made this cake for me.  I see something wrong with this picture. ;)

Anyway, I came across this recipe in our church cookbook the other day, and it was titled Oatmeal Cake–so I just assumed it was the one, and I would have to make it for myself in order to taste it’s awesomeness.  While it is a very delicious cake, it isn’t the one my friend makes, as I found out today on the telephone, and I now have hers. Although, anything will chocolate has got to be better!

Chocolate Oatmeal Cake

1 cup oatmeal {I used old fashioned}

1 ½ cups boiling water

1 cup butter

1 ½ cup sugar

2 beaten eggs

1 cup flour

½ cup cocoa

1 tsp. baking soda

½ tsp salt

1 tsp vanilla

½ cup milk

Topping:

6 Tbsp. melted butter

2/3 cup brown sugar

¼ cup cream

1 cup coconut

½ tsp. vanilla

½ cup chopped pecans

Mix the oatmeal and the water together and let stand while mixing up the cake mix.  Cream together the butter and sugar, and blend in the beaten eggs.  In a medium bowl, combine the flour, cocoa, soda and salt. Stir the oatmeal mixture in with the dry ingredients.  Add the vanilla in with the milk.

Alternate adding the flour mixture and the milk mixture into the creamed mixture.  Once everything is completely combined, pour into a greased/floured cake pan.  I actually used my silicone bundt pan (non-greased), however the baking time was closer to an hour.

Bake in a 350 ° oven for 30 minutes or until cooked through.

For topping:  Combine the melted butter, brown sugar, cream, coconut, vanilla (DD mis-read the recipe and we ended up adding in a full teaspoon of vanilla–it tasted just fine. ;) ) Spread topping on a warm cake and broil in the oven until slightly brown.  Do not forget it is in the oven, or the topping may become a bit, shall I say, on the dark side. :)

This cake is incredibly moist, and you cannot even tell the oatmeal is in there.  My daughter, a bonafide Oatmeal Hater–loved this cake!

That sounds absolutely divine! Especially when you’ve got tons of cheap oatmeal to work with. I was hoping to find a new recipe to use it in!
