		<description>My family has always LOVED apple butter and had an Aunt Ellie (my great Aunt) who, on her farm, made apple butter outdoors in a copper kettle over a wood fire (my great grandmother used a wood-burning stove for cooking and baking until she passed away in 1965, despite having been given a &quot;modern&quot; stove!). Sadly, my great Aunt passed away and no one had her recipe. I found a crock pot apple butter recipe several years ago, made it and canned it. I gave a jar to my mom who said it was the closest to Aunt Ellie&#039;s she had ever had. Instead of sugar, I use honey to sweeten my apple butter. I also found that when using the crock pot, having the lid on keeps too much moisture in the apple butter, so I cover with tea towels -- it allows the steam to escape, but also keeps anything from falling into the crock pot while cooking.</description>
