Apple Banana Oatmeal Breakfast Muffins

Our local grocery store keeps having great prices on browning bananas. So much so, I cannot pass them up. I’ve been freezing sliced bananas for us to use in smoothies, but, you can only have so many.
I seem to be stuck on making Banana Bread/Muffins with our browning bananas. Quite frankly, I’m ready for a change. In addition to our abundance of bananas, we also have an abundace of apples. I was searching for a recipe that contained both, and I found these. With a few slight changes, they are perfect for breakfast and for using up clearanced fruit.

Apple Banana Oatmeal Muffins

1 ½ cups old fashioned oats

1 cup whole wheat flour

1/3 cup sugar

2 tsp baking powder

½ tsp salt

½ tsp cinnamon

2 eggs

2/3 cup milk

1 cup chopped apple

2 mashed bananas

Combine all the dry ingredients in a mixing bowl. Then add in the eggs and milk, and mix thoroughly. Gently fold in the mashed banana and chopped apples.

Spoon into greased muffin tins. You can line them, if desired.

Bake at 375° for 20-25 minutes.

I’m hoping that having some of these muffins handy, will help me with my breakfast issues.

This is a great recipe! I seem to never have enough bananas left to make bread. I tried freezing them, but didn't have much luck.

These muffins sound great – will have to try this recipe next time I have extra apple.

I'm too lazy to slice the bananas before freezing them and just freeze them whole in the peel. When I need mashed banana for baby food, smoothies, or bread I just microwave the frozen banana for about 40 seconds, split the peel on the side, and squeeze out the banana.

Oh yum!!! Those sound delicious and SO easy to make!!!

I usually make raisin bran muffins with applesauce, raisin, craisins and then add in cinnamon and vanilla and sometimes chopped nuts. Everyone loves them!

Okay, I am definitely going to be trying these tomorrow. I love that there is no oil!

I'll share my favourite kitchen tip with you because I can't help but think of it when I find a new muffin recipe: I have one big shelf of my pantry devoted to partially made mixes in ziploc bags. I write the name of the recipe on the bag and reuse them over and over. In the case of this recipe, you would mix the dry ingredients and pour into a bag, then repeat for as many bags as you want to have on hand. This makes breakfast a TOTAL breeze as you only need to drop in the other 4 ingredients (and don't need to measure out all those messy dry ingredients again). I do this for waffles, baked oatmeal, muffins, biscuits, etc. and it saves all kinds of time!

I freeze my brown bananas in the peel. Seems to work good.

I have been making muffins all night – test kitchen time. Your look so good. I like the pic of the muffins in the pan.

I have two gallon bags in the freezer full of ripe bananas. I have this strange compulsion to buy them every time I'm at Costco – we never eat them all so I freeze them.
