I have an additional answer for JennaMo. Try using hard white instead of hard red wheat. I have made bread using both and my husband had no clue the stuff made with white wheat were 100% whole wheat. Its ends up more of a golden color than if you use hard red wheat. Once I figured out we had such a huge preference we sealed up the hard red and will store it more for an emergency situation like job loss.

Thanks for your pearls of wisdom. I don't know if I will get to grind wheat for myself (urban environment and all that) but I am filing it away for future reference!

Sorry I missed your holey bread issue... after rising, I roll my dough out with a rolling pin, then roll the loaf up and put it in the pan.

Hey! That's going to be my next kitchen tip post I think!

Thanks Phoebe for answering all of our questions! I appreciate it so much and seriously, where else could I ask these questions but on a blog? No one I know has even heard of a wheat grinder! But as I learn more - I'm educating them as well! Thanks again!
