Recipe: Evaporated and Sweetened Condensed Milk

A few months back I was right in the middle of making a dish (which I cannot even remember right now) and little did I know, but I was out of evaporated milk. And I needed it to complete my recipe. What on Earth was I going to do?

My wheels started turning–I concluded that the evaporated milk was more than likely nothing more than just that–evaporated milk. I found out that store bought evaporated milk has about 60% of it’s water removed through evaporation. In such case, surely I make it. Especially with powdered milk, right?

Uh, huh! And it is super easy!

With the above in mind this is what I came up with:

Evaporated Milk

2/3 c powdered milk
2/3 cup plus 2 Tsp Water

Mix well. This will get you about 6 ounces (or 3/4 cup) of evaporated milk. Perfect for when you really do not need a whole can of evaporated milk. This way, just make as much as you need–NO WASTE!

While I was on that one, I knew there had to be a way to make sweetened condensed milk as well. A little more to this one, but a lot cheaper–and good in a pinch!
Sweetened Condensed Milk

1/2 cup hot water
1 cup powdered milk
1 cup sugar
1tablespoon butter

Mix well in a blender. Voila!

Now, having said this, you can omit the butter with basically the same results.
I love the convenience of keeping powdered milk on hand. It is definitely working for me. When I need evaporated milk, or sweetened condensed milk, I just make it. And, I don’t have those annoying cans to get rid of!

I make my own of both of these and it really is SO convenient and cheap too. I love that I don’t need to keep either in the pantry.
