New Pizza Favorites: Buffalo Chicken and BBQ Chicken

After making Buffalo Chicken Pizza for dinner Saturday night–I think we have found a new favorite in our house. I adapted ours from Rachael Ray’s recipe. While I was mixing it all up, I feared that it would be too spicy for my the little ones (they liked it–but they are pretty tough), so I came up with a BBQ Chicken pizza as well.

Hope you enjoy them as much as we did!

Buffalo Chicken Pizza
Boneless Skinless Chicken Breasts (I used about 1.5 palm sized pieces) ($2.25)
4 tablespoons butter (.20)
2 tablespoons Worcestershire sauce (pennies)
4 Tablespoons hot sauce, such as Louisiana or Franks. (We used a store brand, and it was perfect) (Ours was a HUGE store brand jug–pennies)
1 (14.5 oz) can of Diced Tomatoes
(You can sub in tomato sauce. I was out! One can makes enough sauce for 2 pizzas) (.25)
¼ cup shredded cheese of your choice (.30)
 
Drizzle chicken breasts with extra virgin olive oil, and sprinkle with Montreal Steak Seasoning. I then cooked ours on my George Foreman grill, but you could always grill outside, or even use your broiler on your oven.
While the chicken is cooking mix up your pizza crust (or use store bought). Let your pizza crust sit a bit, and put your canned tomatoes in the food processor or blender. Puree.
Spread your pizza crust out onto your pizza pan or pizza stone and spread half of your diced tomato puree. Reserve the other half for another pizza, or for another use.

Add your chicken breasts to your food processor and chop them up. Or chop finely. I chop mine up into little bitty bits so that it would go further.

In a medium sauce pan melt the butter. Once the butter is melted add the hot sauce and Worcestershire sauce. Once combined, add in chopped up chicken and mix together.
Spread onto pizza and top with shredded cheese. Bake at 425° for approximately 20 minutes (or until crust is golden and cooked through).
Super delish topped with a dab of Ranch Dressing!
 
And now, for the BBQ Chicken Version. Are you ready?!
BBQ Chicken Pizza
Grill and chop your chicken just as you would for the buffalo chicken.
Combine with your reserved tomato puree
as well as about ½ cup of your favorite BBQ sauce (we used Kraft).
Once fully incorporated, spread onto your pizza crust. Top with ¼ cup of shredded cheese. And bake at 425° as directed above.
Each pizza makes enough toppings for a 16″ pizza. Both of which can be made for under $3.50 a piece!
Easy peasy! This would be great for entertaining, game night, or unexpected company.

We love chicken pizzas at our house.

This is my first time here at your blog…I’m so glad I found it. We are currently working on getting ourselves out of debt. I’m fairly new to the whole coupon thing, but I’m learning quickly. Now I know where to come for inspiration.

We have both liked the BBQ Chicken Pizza both times we’ve been to “the” pizza place in the big city. I’ll have to try this recipe! When your post opened up, I was SURE I smelled pizza! Enough that I sniffed the air a couple times and still got the same thought. Did you add “baked pizza scent” to your blog? I’m guessing that my nose is playing tricks on me, but it really smelled like pizza! *shrug* Anywho, the recipe looks really good, and this will be cheaper than using beef :) You know I’m all about cheaper right now!

Great recipe. I just recently started making pizzas at home. We always eat Buffalo Chicken Pizza at Cici’s, and I’ve been meaning to make it myself. I have made the barbecue chicken though, and it was really good.

another way to save money when making pizza is to leave the sauce off …Yes i said leave it off and put garlic butter on the top of the pizza crust after it is cooked then top with cheese and anything you like …..I love making pizza and have for years so cheap and easy to make ….use leftovers too and blt on pizza is super too cook your crust put the garlic butter on cheese bacon ….cook then let cool a bit add mayo lettuce and tomato …..yummy
love bbq on pizza too ….you can do so much with it just about anything you put on a sandwich can be put on pizza …..
