Menu Plan Week of 3/15-3/21

It’s officially the middle of the month of March. This month we have been busily getting ready for our garden…and boy has it been fun! How I long for fresh veggies from the garden. We need them now more than ever.

Over the next few weeks, our menu will be going through an overhaul. My husband had a cholesterol test, which yeilded not so great results. One of my goals for this year was to learn more about nutrition, apparently now is my chance. If you have any tips for lowering cholesterol/triglycerides, any recipes or websites to share, I beg you to please pass them my way.

I’ve been reading and researching since getting his results on Friday, but my menu was already planned and shopped for. I would like to think that they are relatively healthy, but what do I know? Right now, I am going to leave them as they were planned, but I will leave room to change as I see fit.

Dinners:

  • Sunday: Shepard’s Pie without the mashed potatoes, extra veggies. ($2.80) Side Salad. (.50) ($3.20)(6 servings=.53/ea)
  • Monday: Sweet and Sour Chicken. ($2.75) Fried Rice. (.25)($3)(8 servings=.28/serving)
  • Tuesday: Corned Beef Brisket. Cabbage. Boiled Potatoes. Green Milkshakes for kidlets. ($4.50?)(5 servings=.90/ea)
  • Wednesday: Chunky White Bean Tomato Soup. HM French Bread. ($2-ish)
  • Thursday: Crockpot Rotisserie Style Chicken. ($1.65 for 5 of the 20 servings) Rice. (.25) Steamed Veggies. ($1)($2.90)(5 servings=.58/ea)
  • Friday: We will be gone.
  • Saturday: Chicken Pot Pie (using some of the leftover chicken). ($1.85) Salad. (.50)($2.35)(8 servings=.23/ea)

TOTAL COST: $17.95 AVERAGE PRICE PER SERVING=.45/ea

My hubby’s cholesterol is 212…a bit high. His doctor said to cut out sugar and exercise. Of course, cutting down on foods with cholesterol works too (like eggs, cottage cheese, etc) :)

Hey! I read your blog regularly but never comment. But I happen to be a registered dietitian so thought I would offer up some resources for you and your husband. Check out this link at the National Heart Lung and Blood Institute at the TLC method to lowering your cholesterol. Also, your menus look great but some great substitutions would be brown rice for white rice, whole grain/whole wheat bread for white bread, limiting butter or switching to a tub margarine, and limiting red meat to 1-2 times per week. Also increasing fatty fish like salmon and trout to 1-2 times per week to get those heart healthy omega 3 fatty acids. You are getting a lot of veggies in and don’t forget fruit. That coupled with exercise can really help lower his cholesterol numbers. Cooking from scratch is a great start! Good luck!

I have battled high cholesteral for a few years now. The one suggestion I can give that works for me is to eat oatmeal every morning. It made a hugh difference is my numbers.

I just wanted to echo what the dietian noted. We drink lots of water, exercise daily and double up on the veggies and fruit. That goes for the whole family.

It’s all about the whole grains..especially in foods like oatmeal and Cheerios. It worked for my dad!

From what I know about triglycerides, your body makes more of them when you have lots of sugars in your diet. That means you will be looking at eating less carbs (or at least eating the whole grain forms) as well as cutting out the trans fats. Oh and lots of Vitamin C is good, so up the fruits and veggies. Thank goodness its soon to be summer eh?
