Blueberry Streusel

I’m really trying to feed my family a hot breakfast every morning before they leave the house. It just seems to start the day off right.

I’m not a big breakfast eater, so this makes things challenging. I really wish that I would have participated in The Happy Housewife’s Hot Breakfast Challenge–but I didn’t. I have however, gained a lot of good breakfast ideas!

This particular recipe has been on my to-make this for quite sometime. I’ve had it tucked away in my highly unorganized recipe binder, and I just so happened to come across it earlier this week.

It is perfect to mix up on a Sunday morning and pop it in the oven while you finish getting ready and getting the kids ready, since it takes just over an hour to bake.

Blueberry Streusel

1 pint (2 cups) frozen or fresh blueberries
1 (14 oz) can of sweetened condensed milk
2 tsp grated lemon peel
3/4 c plus 2 Tbsp butter
2 cups biscuit mix (I used my homemade substitute)
1/2 cup firmly packed brown sugar

Combine the blueberries, sweetened condensed milk and lemon peel.  In another bowl, cut 3/4 cup butter into small chunks and combine with 1 ½ cups biscuit mix; until crumbly.  Combine with blueberry mixture and spread into a 9 inch, greased baking dish.

In a small bowl, combine the remaining biscuit mix (½ cup) and brown sugar. Cut in 2 Tbsp butter until crumbly. Spread over the blueberry mixture in the pan.  Bake for 1 hour and 10 minutes or until golden. Serve warm.

For a dessert, top with Vanilla Ice Cream. For an added punch, add blueberry syrup.
Doesn’t that just look delish?

Mmmmm… my mouth is watering. Can you list your homemade substitute? I am trying to stay away from prepackaged items by putting together a recipe book that will use better ingredients from my pantry.

I am so trying this recipe! We have a couple of blueberry bushes, and I always have more berries than I know what to do with. This looks like a nice departure from my standard blueberry muffins. I wish I had some now!

I’m also so getting off the computer. This is my second comment to you today!!! I’m really going to get busy. However, my to do list isn’t quite as large as the one you posted ;) Again, thanks for the recipe…

I love a breakfast that can be turned into dessert by adding a scoop of ice cream :-) If we add frozen yogurt instead can it still be breakfast? This looks heavenly!
