I know this is an old post but just a little tip that might help... The big can of salmon is around 14 oz. with the bones and skin. Once I removed the bones and skin I weighed what I had and it was 8.6 oz including the bowl. Next time I'm going to try the boneless/skinless can that is 7.5 oz. for the same price. If it truly is ready to use it'll give me the same amount of fish for the same price and save me the time (and digust!) of having to remove the bones/skin myself. Make sense?

I make these quite frequently (my recipe is slightly different than yours; I put in only 1 egg, but I also put in Worcestershire sauce and some flour to hold the patties together). I have found the packets of salmon at our grocery store on sale a lot. I buy two of the pouches and that makes enough for dinner for the 4 of us. I usually serve with mashed potatoes and it's yummy. For me, the pouches are worth it because there is no skin or bones to mess with. I absolutely hate that part of salmon patties so anything that makes me eat more fish without the pain and agony is worth a few extra pennies (for me anyway).

I'm trying this tonight! We have salmon that I froze - knowing that salmon doesn't freeze well but should be okay in a casserole or as patties. . . I'd forgotten about it!

That us why I pull all of 'em out.

Deftfreemommy-
The very first time I opened a can of salmon...years ago...I threw it away because I thought I bought the wrong kind! It is well worth the little work..but I TOTALLY know what you mean! :)

Phoebe

BAHAHAHA Salmon is ugly isn't it? I've made a version of these for years. I drain the salmon, take out that bigger round bone that's a back bone/spine I think, but I leave the skin and tiny bones. If you mush it up you can't even tell!
