Ham and Scalloped Potatoes

My mom used to always make this dish, but I’m always forgetting about it. I still had some ham leftover from Christmas and I knew it needed to be dealt with.

The other night I decided to whip up this old family favorite.

Ham and Scalloped Potatoes
2 cups leftover ham ($1.88)*
4 med sized potaoes (.50)
1/2 c finely chopped onion (.15)
2 1/2 c milk (.40)
1/4 c butter
5 tsp flour
handful shredded cheese (.25)
Saute the onions until clear in a dab of butter. Meanwhile, silce pototes thin. I used my new handy dandy food processor. It was done in a jiffy! Also, chop ham into bite sized pieces.
Warm milk in microwave or saucepan, but do not boil. In another saucepan, melt the butter and stir in the flour gradually. Add warm milk and cheese. Stir until cheese is melted.
Grease a 9 x 13 pan. Layer the ham, potatoes, and onions. Pour milk mixture over the top.
Bake at 350 degress for 1 hour, or until potatoes are tender.
Total Cost: $3.18

We served ours with peas, so the total dinner cost was $3.68. 8 servings. .46/serving

*Our Christmas ham was $15. So far (including this one) my family has eaten 5 meals. With the remainder ham, I put it in the food processor (I’m loving this thing!) and chopped it up. I broke it up into meal size portions and placed in the freezer for later. I came up with 3 new containers, for a total of 8 meals. I took the total cost of my ham ($15) and divided it by total meals (8) and that is how I came up with $1.88.

Sounds good. I think we used the last of our Christmas Ham the other day though. Will have to remember or save this one for next time. :)

I used to make this often, but didn’t realize how long it had been until I made it a week or so ago and my kids went NUTS, asking me to please, please make it again! I do mine with the leftover ham, sliced potatoes, and just your basic white sauce, layered in thirds, and then sprinkled w/ cheddar cheese on top. I don’t use onions because nobody eats them here!! :-)

This is a great way to utilize leftover ham. I have a Ham and Potatoes Crockpot recipe that I love. It’s good to have another option so that the family doesn’t get bored.

This sounds so yummy. I have a recipe for this in the microwave but it always “explodes” and makes a mess all over the inside. I am going to have to try it in the oven.

This was awesome! I had never made scalloped potatoes before *scared*, but these turned out great and with ham too! Definitely a keeper recipe and so easy too! Thanks a bunch!
