Whole Wheat Honey Pumpkin Muffins

Okay…these things are AWESOME!

I was getting ready to fix dinner, and I remembered that I had some pumpkin in the fridge that HAD to be used up. So, I went on a hunt for a dessert that used pumpkin. Thank heavens for internet.

I came across this one one on AllRecipes and adapted it to my family’s taste and to things I had on hand. Oh so good.

1 1/2 c Whole Wheat Flour (.26)
1/2 c brown sugar (.10)
1 tsp pumpkin pie spice
extra dash of cinnamon
3/4 tsp baking powder
1/2 tsp soda
1/2 tsp salt
2 eggs
1 cup pumpkin puree (.25)
1/2 c oil (.25)
1/2 c honey (.25)

Preheat oven to 350 degrees. In a bowl mix flour, brown sugar, spices, baking powder, baking soda, and salt. Make a well in the center and add eggs, pumpkin, oil and honey. Mix ingredients until moistened. Fill greased muffin cups (or lined) 2/3 full.

Bake for 18 minutes or until muffins spring back.

Estimated Cost: Approximately $1.15 for about 14 muffins
